Hopi Red Amaranth

Amaranth, a plant used for both its spinach-like leaves and for the grain gathered from the center stalk. The leaves and seeds of the amaranth plant are still characteristic ingredients in Mexican cuisine and were used cemonially by the Aztecs. Provides a high quality protein, with a nearly perfect balance of essential amino acids, including abundant lysine and methionine, not found in most grains.
